What is sharp?
- >400 is quite dull. Your knife needs TLC.
- 250 - 400 is sharp, new-knife sharp.
- 150 - 250 is very sharp. Sharper than new knives often are.
- 75 - 150 is impressively sharp. You don’t need a sharpening lesson.
- 25 - 75 is crazy sharp. Razor blade sharpness, wow!
